Herds are distributed among five different farms: Oliveira and Pequito (municipality of Mora), Quinta do Sande (municipality of Évora), Boavista and Nateiras (municipality of Coruche).

The farms are organized in fields, which are cultivated in a system of crop rotation in order to control pests. Certain crops are pastured directly from the land. There are also permanent grasslands that sustain the cattle. These fields are also occupied by native species of oaks (cork and holm oaks).

In each heard you can find several breeds: Charolais in Quinta do Sande, where the pastures are richer; Charolais cross-bred with Limousin and Mertolengo (a Portuguese breed) in the area of Pavia and pure-breed Mertolengo in the poorer soils of Coruche. In all of these cases we practice extensive grazing with animal densities adapted to each region, always having in mind the preservation of the soil and forest. Calves are sold throughout the year: the Charolais and the mixed-breed are sold at weaning and the pure-bred Mertolengo are fattened by us.
